gingerbread bars with cream cheese icing

Up your gingerbread game with these sweet and soft Gingerbread Bars with Cream Cheese Icing. A delicious treat to make for friends or family (or add to your cookie platter), these gingerbread bars are bursting with the flavours of the season. Top your treats with red, white and green sprinkles for an added dash of holiday fun.
Step 1

Preheat oven to 350˚F. Prepare 9" x 13" [22.9 cm x 33 cm] pan with vegetable pan spray.

Step 2

In a small bowl, combine flour, ginger, cinnamon, baking soda, salt, cloves and nutmeg.

Step 3

In a medium bowl, whisk together brown sugar, butter, molasses, egg and vanilla. Add flour mixture and stir until well combined.

Step 4

Press dough into pan and bake 19-23 minutes or until a toothpick inserted into the centre comes out with a few crumbs attached. Cool completely before icing.

Step 5

For icing, combine butter and cream cheese in a medium bowl and beat on medium speed with an electric mixer until combined, about 2-3 minutes. Add sugar and vanilla extract and beat until smooth.

Step 6

Spread icing evenly over the gingerbread and sprinkle with sprinkles. Cut into squares and serve.

1 C Firmly-Packed Dark Brown Sugar
¾ C Butter, Melted
1/3 C Molasses
1 Egg
2 Tsp Vanilla Extract
Icing:
8 oz Cream Cheese, Softened
¼ C Butter, Softened
1½ C Confectioners’ Sugar
½ Tsp Vanilla Extract
Wilton® Holiday Sprinkles

Makes about 24 servings.
